Ingredients
Method
- Preheat the oven to 220°C.
- Slice the chicken, peppers and onion into thin strips and add to a mixing bowl.
- Add the oil and all the spices to the mixing bowl, then mix until everything is evenly coated.
- Spread over a large baking tray.
- Bake for 15 minutes, stir, then cook for another 10 minutes or until the chicken is cooked through.
- Spoon into tortillas and top with coriander, or cool completely and portion for later.
