Chocolate Nut Butter Overnight Oats

This is an excellent make-ahead breakfast.
Make a few jars on a Sunday evening and go to town in the morning knowing that you're eating enough protein and fibre to keep you satisfied until lunch.

Ingredients
  

  • - 160ml unsweetened milk of choice
  • - 40g gluten-free rolled oats
  • - 80g plain kefir or Greek yoghurt
  • - 1 tbsp ground flaxseed
  • - 1/2 tsp vanilla extract
  • - 2 tbsp almond or cashew butter
  • - 1 tbsp cocoa powder
  • - Small pinch of sea salt optional

Method
 

  1. Mix everything together.
  2. Spoon into a glass jar or glass container.
  3. Refrigerate overnight.
  4. Stir before eating and add extra milk if you want it less thick.

Notes

Why this works well on low energy days
- No cooking, so long as your gut can cope with it uncooked
- Make-ahead
- Contains protein, fibre and fats
- Gluten-free if you use certified gluten-free oats
- Useful when mornings are chaos
- It's chocolatey, which is never a bad thing
Easy swaps
- Use peanut butter, cashew butter or tahini.
- Add berries or bananas with nuts in the morning.
- Use Greek yoghurt if kefir feels too tangy.
- Add a scoop of protein powder if you already use one and tolerate it well.
